home made banana muffins and chai tea....x
what warms the cockles...
mmm last night i even surprised myself and made banana muffins with walnuts and coconut and then brewed tradtional chai tea on the stove... amaze!
it was the perfect way to accompany the rain and cold and i think you should all give it a whirl, so below i have included the recipes!
banana muffins;
- 90g butter
- 1/2 cup castor sugar
- 2 eggs
- 1 packet of crushed walnuts
- 1 cup of shredded coconut
- 1 teaspoon of vanilla essence
- 2 cups of plain flour
- 2 teaspoons of baking powder
- 3 medium ripe bananas
- grease a 12 tin muffin tray and preheat oven to 180'c
- place all ingredients except for walnuts and coconut into food processor and process until smooth
- stir in walnut pieces and shredded coconut
- evenly distriubte between your 12 muffin trays and top with additonal coconut.
- bake for 40min or until golden brown
chai tea on the stove: serves 2
- 2 teaspoons of chai tea (t2 chai is the best!)
- 1 1/2 cups of water
- 1 cup of vanilla soy milk
- 2 teaspoons of honey
- add chai tea and water to saucepan and bring to the boil.
- reduce heat and add soy milk and honey
- simmer for 10 mins
- strain and serve
..... and finally make sure you share and enjoy!
