happy hump day everyone! we are almost to the weekend!! yay!!
in the mean time i have something yummy to share with you all! its going to have you running to the supermarket in your lunch break!
This is a winner! Its tasty and so quick to make!
All you need is:
1 tablespoon olive oil
2 garlic cloves, crushed
1 punnet yellow grape tomatoes, halved
1 punnet red cherry tomatoes, halved
2 tablespoons balsamic vinegar
1/2 cup fresh basil leaves
cut all your tomatoes in half. heat oil and garlic in a fry pan and add the tomatoes.
cook for about 4 mins or until tomatoes are warm but not mush!
pour into a bowl and add the vinegar, basil and salt and pepper!

it’s a great salad for a bbq!
i like to toast big chunks of sourdough bread for croutons under the grill with a little salt and olive oil for some added crunch to the salad. just throw them in with the basil at the end!
