hola mexican!

I cant exactly cook…except for one thing! Chilli Con Carne!! And I’m making it tonight for dinner! Yum!
And the best part! It only takes 15mins!

What you need:
1 tbs olive oil
1kg lean beef mince
1 brown onion, chopped
1 red capsicum, chopped
1 packed of chilli con carne seasoning (with the Mexican stuff at the supermarket)
800g can diced tomatoes
400g can red kidney beans, rinsed, drained
2 tbs tomato paste

To serve:
Steamed rice
Fresh coriander
Grated Cheese
Sour cream

Here we go….
- Grab a large frying pan out and heat the olive oil on high. Put the mince in, and break up any chunks with a wooden spoon. Cook until its all nice and brown.
- Add the onion & the capsicum. Cook for about 3 mins until they are soft then add the seasoning packet, along with the can of tomatoes, beans and tomato paste.
- Stir, cook, stir until its thickened, about 2 mins.
- Cook your rice, and serve!
- Top with chopped corinander, sour cream and a sprinkle of grated cheese! Mmmm!!!
