tonight I made up a recipe for roasted vegetable salad.
pumpkin, zucchini, potato chopped into cubes, roasted on a baking tray slowing for about half an hour with cherry tomatoes and baby onions
one roasted i toasted them in a bowl with a bunch of chopped parsley, crumbled fetta and a dressing i made with olive oil, red wine vinegar, mustard and honey. delicous!
we had it with dory fillets seasoned with chilli flakes, salt & pepper! yum!
